A blend of Chardonnay and Pinot Noir. Pale pink colour; with a nose of wild strawberries; medium-bodied, dry, strawberry with citrus acidity. Well balanced. ***½

It doesn't get much better than this. Medium straw colour with a nose of toasted brioche and apples; medium-bodied, beautifully balanced with elegant, clean lines and a lovely citrus acidity that carries the flavour. *****

Cave Spring Chenin Blanc Traditional Method 2006 (Ontario)

This is the first sparkling Chenin to come out of Ontario and a very good one it is. It has a quince and crabapple flavour with lively acidity and an oily mouth feel. A year or two in bottle should bring out the bouquet. ****
