Jacob's Creek Sparkling Rosé (Australia)
$13.95 (LCBO #926668)
A blend of Chardonnay and Pinot Noir. Pale pink colour; with a nose of wild strawberries; medium-bodied, dry, strawberry with citrus acidity. Well balanced. ***½
Food match: cold salmon; ham

Deutz Brut Classic (Champagne)
$57.95 (Vintages #710038)
It doesn't get much better than this. Medium straw colour with a nose of toasted brioche and apples; medium-bodied, beautifully balanced with elegant, clean lines and a lovely citrus acidity that carries the flavour. *****
Food match: lobster; caviar

Cave Spring Chenin Blanc Traditional Method 2006 (Ontario)
$24.95 (Available only at the winery 1-905-562-3581 email tpennachetti@cavespring.ca)
This is the first sparkling Chenin to come out of Ontario and a very good one it is. It has a quince and crabapple flavour with lively acidity and an oily mouth feel. A year or two in bottle should bring out the bouquet. ****
Food match: trout in almonds; goat's cheese.
