TASTING: William Fèvre 1999 Chablis (all his domaine wines) (May 9, 2001)

Chablis Les Lys 1999 ($30)
Colour: pale straw
Nose: lemon, warm hay
Taste: green peach, citrus, medium-boded, wonderful balance with great length. (****½)

Chablis Montmains 1999 ($32)
Colour: medium straw
Nose: minerally, intense, vanilla and melon
Taste: elegant, spicy and clean with caramel and citrus flavours. Great length. (*****)

Chablis Vaillons 1999 ($32)
Colour: straw
Nose: barnyard, forward vanilla and spicy apple notes
Taste: full-flavoured apple with an earthy note, lingers on the palate. (****½)

Chablis Beauroy 1999 ($31)
Colour: straw
Nose: earthy, Granny Smith apple
Taste: ripe fruit, spicy, lemon, green mango, lively acidity, evident alcohol on the finish. (****)

Chablis Bourgros 1999 ($50)
Colour: medium straw
Nose: barnyard, flinty, smoky, terroir-driven
Taste: lemony, green apple, green melon. Lively acidity but a touch hard on the finish. (****)

Chablis Vaudésir 1999 ($55)
Colour: medium straw
Nose: flinty, smoky, vanilla
Taste: ripe fruit, spicy, cinnamon, apple, again with a touch of hardness on the final palate. (***½)

Chablis Les Clos 1999 ($59)
Colour: straw
Nose: a touch of barnyard, ripe fruit, smoky, vanilla tones
Taste: spicy, crisp, apple, orange, full-bodied, mouth-filling with a caramel note in the finish. (****½)
