Fairmont Banff Springs' 13th Annual Festival of Wine and Food 

If you're passionate about exploring the world of wine and food, we encourage you to join the excitement at the 13th Annual Festival of Wine and Food, October 29–31, 2004, hosted by The Fairmont Banff Springs.

Two rewarding days in a spectacular mountain setting, filled with wine tastings, seminars and fine cuisine. Mingle with the wine world's most prestigious names. Taste a treasury of varietals and vintages during your stay. Whether you're a novice wine lover or experienced connoisseur, you're in for an enriching, entertaining and thoroughly enjoyable celebration of wine.

The Fairmont Banff Springs' 13th Annual Festival of Wine and Food will be held from October 29th to October 31st, 2004. The Festival is an all-inclusive package which includes Friday and Saturday nights' accommodation, breakfast and lunch daily, a ticket for both the Friday night Vintners' Reception and the Saturday night Gala Dinner, six formal wine tastings, valet parking, service charges, and all applicable taxes.

Master of Ceremonies
Tony Aspler has been active in the international wine world since 1964. He received his basic wine education in London, England, at Grant's of St. James' Wine School (passed with distinction). As a consultant and wine judge, he makes frequent trips to the vineyards and wine fairs of Europe and the new world and is recognized as the leading authority on Canadian Wines.

Tony Aspler has been writing about wine for 29 years, and today he is the most widely respected wine writer in Canada. He is a member of the North American advisory board for the Masters of Wine, creator of the annual Ontario Wine Awards competition, an honorary governor of Cuvée and a director of the Independent Wine & Spirit Trust.

Tony is one of the most technologically advanced wine experts in the world. He was the wine columnist for the Toronto Star for 21 years and has authored eleven books on wine and food including The Wine Lover's Companion, The Wine Lover Cooks, Travels with my Corkscrew and Vintage Canada. Tony currently writes for a number of international wine magazines, including Harper's, Wine Tidings, Post City Magazines, Fine Wine & Liquor (China), and in Australia. He is the Canadian contributor to Tom Stevenson's annual Wine Report. In addition, he also writes fiction.

Friday, October 29th, 2004
18:00–19:45: Jackson-Triggs, Canada
Co-founder and Proprietor Allan Jackson of Jackson-Triggs will guide you through a three-dimensional tasting of internationally awarded Icewines from British Columbia and Ontario. Explore the vintages, viticultural zones and varietals of these two regions of Canada. Since Jackson-Triggs' inception in 1993, both its Okanagan and Niagara wines have been honoured with international awards and have set new quality standards for the Canadian wine industry. The list of awards soars above most Canadian wineries, with over 900 awards won to date – including more than 595 International and 315 Canadian competitions. Guests will have a rare opportunity to sample some of the world's greatest sweet wines from Canada.

20:00–22:00: Vintner's Reception
Lively, outspoken, determined, single-minded and always striving for perfection – these words sum up the personalities we have assembled this year. This evening provides a wonderful opportunity to sample the fabulous culinary treasures of the Castle and to rub shoulders with the luminaries of the weekend.

9:00–11:00: Penfolds, Australia
Celebrate the fifth edition of Penfolds' comprehensive tasting and cellaring guide, Rewards of Patience, as Chief Winemaker Peter Gago leads you through an exceptional tasting experience: Canada's first-ever vertical tasting of Penfolds' ultra premium wines will include Penfolds Yattarna, Bin 707, St. Henri and Grange, an Australian icon. Created by Max Schubert in 1951, Penfolds Grange today holds iconic status around the world. It has been named a National Trust Icon by the South Australia National Trust and was named one of the Top Dozen Wines of the 20th Century by Wine Spectator. Penfolds Grange has been called the only "first growth" of the southern hemisphere and has een described by Robert Parker as a leading candidate for the richest, most concentrated dry red table wine on planet Earth.

11:30–13:00: "Flavours of the Castle" Luncheon
Menu presented by Executive Chef Martin Luthi and Banffshire Club Chef Daniel Buss, paired with premium wines from our featured wineries.

13:30–15:00: Castello di Fonterutoli, Italy
Join Francesco Mazzei, Proprietor of Castello di Fonterutoli, as he intrigues us with a superior tasting of five vintages of Siepi, all of which received the coveted "Three glass" award, and the same five vintages of their top Chianti Classico, Castello di Fonterutoli. Castello di Fontererutoli is a well-structured and complex estate with great character and tradition. It has been handed down through the family since 1435, with Francesco being the 24th generation. The estate is generally regarded as one of the most important properties in the Chianti Classico zone and in Italy, an estate projected towards the future, always seeking new quality frontiers. It is considered by Gambero Rosso (the definitive guide to the world of Italian wines) to be the most awarded Tuscan estate, having received 19 “Three Glass” prizes – their highest award. You are sure to enjoy this vintage vertical tasting from this renowned Tuscan Estate from Italy.

15:30–17:00: Montes, Chile
Aurelio Montes, Winemaker, founding partner of Vina Montes, will take you through the vineyards of Chile that have been internationally recognized for producing top wines. This remarkable tasting will include four vintages of the Montes Alpha "M" series as well as an opportunity to taste the highly rated Montes Folly. These wines are extremely limited in their production; Aurelio offers them only if he feels the quality is what it should be. Searching for the ultimate and not leaving much to chance, he selects the grapes one by one from their "La Finca de Apalta" estate. While Alpha "M" has become the benchmark for other Chilean wines to challenge, Folly has been the wild dream come true and one of the reasons why Montes was awarded Chilean "Winemaker of the Yea."

19:00–24:00: Saturday Gala Dinner
Featuring the cuisine of our Executive Chef Martin Luthi and 5 Diamond Award Winning Banffshire Club Chef Daniel Buss, paired with premium wines from our featured wineries.

9:00–10:30: Mumm Champagne, France
Let Dominique Demarville, who is heralded as Champagne's youngest Grande Marques winemaker at 35 years of age, take you on his love affair with bubbles. The tasting will begin with a comprehensive educational experience on the making of Mumm Champagne, whereby Mr. Demarville will show you the various Crus and varieties that are used in the blending of Mumm Champagne. In addition, you will have the chance to discover exceptional champagnes from a lineup that includes Mumm de Cramant, the delicate Blanc de Blancs, Mumm Carte Classique and the unique vintages of the world renowned Mumm Cordon Rouge, some dating back to 1979. Mumm champagnes bring out all the richness of the vineyard and reflect tremendous attention to detail. Enjoy the promise of their aromas, together with the wide range of colours and diversity of flavours. These exceptional cuvees bring an original and effervescent touch to all your champagne moments. 10:45–12:15: Niebaum-Coppola, United States
Embrace the history of the Niebaum-Coppola Estate as Erle Martin, President, escorts you through a tasting of vintage Rubicon. Francis Ford Coppola has been making movies for more than 40 years, and wines at his Niebaum-Coppola Estate Winery in the Napa Valley for almost 30. Rubicon is the flagship wine of the Niebaum-Coppola Estate. It reflects the singular terroir of this world-renowned property. Rubicon captures the heritage of Rutherford Cabernet Sauvignon and is made from 100% organically farmed grapes. It comes only from vineyards owned by Niebaum-Coppola Estate Winery in western Rutherford. The rich alluvial soils impart a fine character and produce wine with unique flavours that reveal a richness, structure and complexity as distinctive as it is rare. This extraordinary tasting will take you on a journey of quality combined with history creating an unforgettable experience.
